NON are a very exciting new addition to our drinks menu. Founded by, Aaron Trotman in Melbourne, a serial entrepreneur and foodie determined to create the future of drinks, non is an intricate balancing act of flavour built from the ground up with key notes of floral, tannin, salinity & acidity and a bold, minimalist design.

NON No.1 is a salted raspberry and chamomile sparkling wine alternative that would make the perfect aperitif. Freeze dried raspberries are cold steeped, before adding the chamomile to provide the tannins that you’d expect in a glass of red. It’s finished with Murray River Salt and verjus made from Semillon grapes. A perfect alternative to a glass of rosè.

NON No.7 is a stewed cherry and coffee alternative that is much more digestif suited. The cold brewed coffee in it hits you first, followed by the cherries that have been stewed in spice mix for a couple of hours before being blended with a small amount of Murray river salt to balance out that sweetness. Great as little pick me up or to cleanse the palate and finish your meal!
